Creamy Garlic Salmon is restaurant quality salmon in a creamy sauce made with spinach, sun dried tomatoes and Parmesan cheese.
Ingredients
3 Salmon fillets, cut into pieces
2 tbsp Olive Oil
2 tbsp Butter
4 Garlic cloves, minced
1.5 cups Cherry tomatoes, halved
1 cup Heavy cream
1 tbsp Red Pepper flakes
1 tsp Dried Basil
Freshly ground Black pepper
Salt to taste
2 cups Spinach
1/2 cup Parmesan cheese, grated
Method
Season the salmon fillets on both sides with salt and pepper.
Heat Olive oil in a skillet, place the seasoned salmon.
Let it cook over medium heat for 1-3 minutes, flip the salmon to cook the other side.
Remove the salmon to a plate and keep warm.
To the same skillet, add butter. Once melted, add minced garlic. Cook for a minute.
Add cherry tomatoes, fry for 2 minutes.
Reduce heat to low, add the heavy cream and let it cook for 2-4 minutes, stirring often.
Season the cream sauce with salt, black pepper, red pepper flakes and dried basil.
Let the cream cook for another 2-3 minutes.
Add in the spinach and allow to wilt in the sauce.
Now add in the cheese and allow the sauce to cook for a minute until cheese melts through.
Add salmon fillets back into the pan and spoon the sauce over the top of the fillets.
Serve warm over rice, pasta or mashed potatoes.
