Paneer Quesadilla





Ingredients

7 oz Paneer, shredded

1/2 tsp cumin seeds

1/4 cup red bell pepper, sliced

1/4 cup Green bell pepper, sliced

1/4 cup Yellow bell pepper, sliced

1/4 cup Jalapenos, chopped

1/2 cup Onions, sliced

1 .5 tbsp taco seasoning

1 tsp Red chili powder

1 tsp cumin powder

1/4 cup chopped cilantro

1/2 cup corn

4 cloves, garlic minced finely

1 can black beans, drained and rinsed well

Salt to taste

2 Tbsp Oil

Shredded Mexican blend cheese

Flour tortillas

For Jalapeno Cilantro Sauce

1 cup Cilantro

1/2 cup mayo

1 Jalapeño

1/2 tsp cumin powder

1 garlic clove

2tbsp Lime juice

Combine all of them in blender for spicy sauce.

Instructions

Heat oil in a pan, add cumin seeds, Jalapenos, garlic, onions, red, yellow, green bell peppers, salt and cook for about 4-5 minutes.

Add shredded paneer, taco seasoning, cumin powder, chili powder and cook for another 5 minutes.

Add corn, black beans and cilantro and stir to combine well.

Heat oil in large skillet or electric griddle, place one tortilla, flip it few times that way each side is heated up.

Remove the tortilla from the pan and place it on a plate.

Spread a thin layer of Jalapeno Cilantro Sauce on one half of the tortilla.

Add a layer of cheese, few spoons of paneer mixture and fold over the other half of the tortilla.

Place the folded tortilla on griddle, cook till both the sides of the tortilla turn golden brown.

Remove from skillet, cut it into half and serve hot.
