If you like Thai food, this is the recipe for you. It's simple to make and will satisfy those Thai takeout cravings. This Red curry noodle bowl is flavorful saucy and super easy to make. You can make them in just 30 minutes with your choice of vegetables and protein.
2 single serve Thai Rice Noodles
1 can Coconut Milk
4 tbsp Red Curry paste
1 tbsp Brown sugar
1 lb Boneless chicken
1 tbsp Cooking oil
1/2 cup Onions, sliced
1/2 cup Green bell peppers, sliced
1/2 cup Red bell peppers, sliced
1/2 cup Yellow bell peppers, sliced
2 tbsp Fish sauce
1/4 cup Basil leaves
Bring large pot of water to boil. Turn off the heat and add rice noodles, stirring to separate noodles.
Let stand 5 minutes or until noodles are tender. Drain well, set aside.
Heat oil in a wok, add chicken and saute for 8-10 minutes on medium heat until cooked. Keep it aside.
In the same wok, add onions and all the bell peppers. Saute on high for 5-7 minutes.
Stir in coconut milk, red curry paste and brown sugar. Bring to boil and reduce heat to low flame.
Add the fish sauce and cooked chicken pieces, mix well.
Now add the noodles, cook until heated through.
Garnish with basil leaves and serve hot.
