Zesty Lemon Loaf Cake

This Zesty Lemon loaf cake is the ultimate dessert for Lemon lovers.

  • 1 cup sugar

  • 2 tsp lemon zest

  • 1/2 cup softened butter

  • 2 tbsp of veg oil

  • 2 large eggs

  • 2 tbsp of lemon juice

  • 1 and 1/2 cup Self rising flour

  • 1/2 tsp salt

  • 1/2 cup milk

For Lemon Glaze

  • 1 cup powdered Sugar

  • 2 tbsp Lemon Juice

  • Preheat oven to 350F.Lightly grease a loaf pan.

  • In a mixing bowl, add sugar and lemon zest. Mix together to infuse lemon oil from the zest.

  • Add softened butter, oil and mix until light and fluffy.

  • Add the eggs one at a time, mixing well after each addition.

  • Mix in lemon juice and whisk well.

  • Sift together the flour & salt and whisk together with the butter mixture.

  • Add Milk and mix until smooth but do not over mix.

  • Pour the batter into the prepared loaf pan.

  • Bake in a preheated oven at 350F for 50-55 minutes until a toothpick inserted in the cake comes out clean.

  • Remove from oven and place on a wire rack to cool completely.

  • For the glaze, whisk together the lemon juice and the powdered sugar until the sugar dissolves.

  • Gently drizzle the mixture over the top of the cake, letting it drip down the sides.

  • Let the cake sit for about one hour to allow the glaze to set before serving.
