Zesty Lemon Loaf Cake
This Zesty Lemon loaf cake is the ultimate dessert for Lemon lovers.
1 cup sugar
2 tsp lemon zest
1/2 cup softened butter
2 tbsp of veg oil
2 large eggs
2 tbsp of lemon juice
1 and 1/2 cup Self rising flour
1/2 tsp salt
1/2 cup milk
For Lemon Glaze
1 cup powdered Sugar
2 tbsp Lemon Juice
Preheat oven to 350F.Lightly grease a loaf pan.
In a mixing bowl, add sugar and lemon zest. Mix together to infuse lemon oil from the zest.
Add softened butter, oil and mix until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Mix in lemon juice and whisk well.
Sift together the flour & salt and whisk together with the butter mixture.
Add Milk and mix until smooth but do not over mix.
Pour the batter into the prepared loaf pan.
Bake in a preheated oven at 350F for 50-55 minutes until a toothpick inserted in the cake comes out clean.
Remove from oven and place on a wire rack to cool completely.
For the glaze, whisk together the lemon juice and the powdered sugar until the sugar dissolves.
Gently drizzle the mixture over the top of the cake, letting it drip down the sides.
Let the cake sit for about one hour to allow the glaze to set before serving.
