Badam Katli is an Indian style Almond fudge. This one is quick and easy to make. It can be made in less than 30 minutes with 4 simple ingredients, Almond flour, sugar, cardamom powder and ghee. These stay good at room temperature for about a week.
Yield: 20
Ingredients
1/2 cup Sugar
1/4 cup Water
1/4 tsp Cardamom powder
1 cup Almond flour
1 tsp Ghee
Edible silver leaves to garnish
Method
Sift the almond flour and keep it aside.
Heat a non stick pan over medium heat, add sugar and water. Stir and let the sugar dissolve. Add cardamom powder and mix it well.
Once it starts boiling, lower the flame and add the almond flour.
Using a whisk, mix everything together so there are no lumps.
Add ghee and keep stirring on low heat, after around 3 minutes, it will start leaving the sides of the pan.
You have to cook the mixture until you are able to form a dough. It would take around 6-8 minutes to reach this consistency.
To check if the mixture is ready, take a small piece of dough and see if you are able to form a ball. If you can make it, dough is done and you can turn off the flame.
Transfer the dough onto a sheet of parchment paper. Let it cool for couple of minutes and knead the dough.
Press the dough gently to flatten it a bit and place another sheet of parchment paper over it.
Roll the dough with the help of a rolling pin into a disc with desired thickness.
Apply edible silver leaves on the top and cut it into diamond shape.
Cool down and store in airtight container.
