Chickpea Salad

This colorful Chickpea salad is combined with cherry tomatoes, cucumbers, onions, bell pepper, cilantro and chickpeas all tossed in an easy homemade garlic lemon dressing.

Yield: 2 servings

For dressing:

  • 3tbsp Olive Oil

  • 3tbsp lemon juice

  • 2 Garlic cloves, minced

  • 1/2 tsp salt, or to taste

  • 1/4 tsp Ground black pepper, or to taste

  • 1/4 tsp Crushed red pepper, or to taste

For Salad

  • 1 cup Chickpeas, cooked

  • 1 Red bell pepper, chopped

  • 1/2 Red onion, chopped

  • 1 Cucumber, chopped

  • 1 cup Cherry tomatoes, halved

  • 1/4 cup Cilantro, chopped


  • For the dressing, in a jar combine Olive oil, lemon juice, minced garlic, salt, ground black pepper and crushed red pepper. Whisk well to combine.

  • In a large mixing bowl, toss together chickpeas, bell pepper, red onion, cucumber, cherry tomatoes and cilantro.

  • Pour dressing over the salad. Toss to combine.

  • Add grilled chicken & it is completely optional.

  • Serve immediately or cover and refrigerate. Enjoy cold or at room temperature.
