Christmas Plum Cake

It is our family tradition every year to bake this delicious Plum cake for friends and family. Christmas is just not the same without this Plum cake. It is made from soaked dry fruits like cranberries, raspberries, raisins, walnuts, almonds, cashews in Rum. These soaked dry fruits along with some spices goes into this delicious fruit cake. Try out this recipe and indulge in a slice of this baked goodness with its moist, delicious texture and intoxicating taste.

Yield: 1x9in Cake or 2x6inch Cakes

Ingredients:

For Cake

  • 2 cups All purpose flour

  • 1 tsp Baking powder

  • 1/2 tsp Baking Soda

  • 1 1/4 cup Sugar

  • 1 cup unsalted Butter, softened at room temperature

  • 5 Eggs

  • 1/2 tsp Salt

  • 1/2 tsp Cinnamon powder

  • 1/2 tsp Nutmeg Powder

  • 2 tsp Vanilla essence

  • 2 cups Soaked dry fruits

For Caramel

  • 1/2 cup Sugar

  • 1/4 cup Warm water

Method:

  • Take sugar in a sauce pan, add 1 tbsp water and heat it on low heat.

  • It will slowly start to melt and then turn into a deep dark caramel color. This process takes about 6-8 minutes.

  • Take it off the heat and add 1/4 cup warm water. The sugar will harden.

  • Turn the heat back on and slowly heat the mixture until the sugar dissolved completely.

  • Let this cool and set aside.

  • Preheat oven to 350F.

  • To the drained fruits, add 2 tbsp flour, mix well to coat the fruits and keep it aside. This helps preventing them from sinking to the bottom of the cake while baking.

  • Sieve flour, salt, cinnamon powder, nutmeg powder and keep it aside.

  • In a large mixing bowl, add butter, sugar and vanilla essence. Beat them together until smooth and creamy.

  • Add one egg at a time and combine well till smooth.

  • Now add in half of the flour mixture and half of the caramel, fold gently.

  • Add in the remaining flour and caramel mixture. Fold again.

  • Add in the dry fruit mix and fold gently.

  • Pour the cake batter into a greased 9inch cake pan and smooth the top.

  • Bake for 50-55 minutes until the top turns dark brown and when a skewer inserted into the cake comes out clean.

  • Let the cake cool completely, then slice and serve.
