Easter is right around the corner, so today I am sharing a recipe for Easter Coconut Macaroon Nests.
Yield: 12 servings
4 Egg whites
1 tsp Vanilla extract
1 tbsp Sugar
Pinch of Salt
14 oz Sweetened Coconut flakes
Preheat the oven to 350F. Coat the mini muffin pan with cooking spray and set the pan aside.
In a large bowl, lightly whisk together the egg whites, salt, vanilla extract , salt and sugar to combine.
Add in the coconut flakes and combine well.
Scoop out about 2tbsp of coconut mixture and place in each prepared mini muffin cup.
Lightly press down the center and the sides of each cup to form a shape of a bird nest.
Bake for 20-25 minutes, until lightly golden on top.
Let the nests cool completely.
Place 3 egg candies in the center of each macaroon and serve.
