Easter Coconut Macaroon Nests

Easter is right around the corner, so today I am sharing a recipe for Easter Coconut Macaroon Nests.

Yield: 12 servings

  • 4 Egg whites

  • 1 tsp Vanilla extract

  • 1 tbsp Sugar

  • Pinch of Salt

  • 14 oz Sweetened Coconut flakes

  • Mini Easter candy Eggs

  • Preheat the oven to 350F. Coat the mini muffin pan with cooking spray and set the pan aside.

  • In a large bowl, lightly whisk together the egg whites, salt, vanilla extract , salt and sugar to combine.

  • Add in the coconut flakes and combine well.

  • Scoop out about 2tbsp of coconut mixture and place in each prepared mini muffin cup.

  • Lightly press down the center and the sides of each cup to form a shape of a bird nest.

  • Bake for 20-25 minutes, until lightly golden on top.

  • Let the nests cool completely.

  • Place 3 egg candies in the center of each macaroon and serve.
