Easy Frittata

This easy Frittata recipe is a perfect healthy option for breakfast or brunch.

Yield: 2 Servings

  • 4 eggs

  • 1/4 tsp Salt

  • 1/8 tsp Garlic powder

  • 1/8 tsp Onion powder

  • 1/4 tsp Black pepper powder

  • 1/4 tsp Crushed red pepper

  • 2 tbsp Olive oil

  • 1/4 cup Milk

  • 2 cups vegetables of choice spinach, bell peppers, broccoli, cherry tomatoes, etc.

  • Preheat the oven to 375F.

  • In a mixing bowl, crack the eggs. Add salt, garlic powder, onion powder, black pepper powder crushed red pepper and milk.

  • Whisk just until the egg yolks and whites are blended. Set it aside.

  • Heat olive oil in a cast iron skillet, add spinach and sauté until it is wilted.

  • Add bell peppers, broccoli and cherry tomatoes. Cook for few minutes stirring occasionally.

  • Turn off the stove and pour the egg mixture over the vegetables.

  • Stir gently to combine the mixture across the pan.

  • Bake for 15 to 20 minutes or until the eggs are set.

  • Remove from oven, let cool for 5 minutes. Slice with a sharp knife and serve.
