Gongura Mamsam(mutton), a traditional recipe made with Gongura/red sorrel leaves which are naturally sour in taste. 'Gongura' is a telugu term for 'Sorrel leaves'. This is my Mom's recipe and the best recipe that can be made with Gongura.
Ingredients
2tbsp Oil
1lb Mutton
3 cups Red Sorrel/gongura leaves
1 cup Onions, chopped
3-4 Green Chillies
1/2 tsp Turmeric powder
1 tbsp Red chili powder
1 tbsp Ginger garlic paste
1 tsp Cumin powder
1 tsp Coriander powder
1/2 tsp Garam masala powder
1 cup Warm Water
Salt as needed
Method
In a wide vessel, add Sorrel/Gongura leaves and 1/2 tsp Salt. Close the lid and cook on low flame for 15 - 20 minutes until they turn soft.
Heat Oil in a pressure cooker, add onions and green chillies. Saute till the onions turn light brown.
Add turmeric powder, ginger garlic paste and saute till raw flavor is gone.
Now add the mutton pieces and mix well. Cover it and cook for 4-5 minutes.
Add Red chilli powder, cumin powder, coriander powder, garam masala powder and salt as needed. Mix it well, cover and cook for 4-5 minutes. Adjust the seasoning if required.
Now add the cooked sorrel/gongura leaves and warm water.
Mix it well and pressure cook for up to 3 whistles.
Once the pressure is released, Gongura mutton is ready to serve.
Serve hot with plain rice.
