Gongura Mutton

Gongura Mamsam(mutton), a traditional recipe made with Gongura/red sorrel leaves which are naturally sour in taste. 'Gongura' is a telugu term for 'Sorrel leaves'. This is my Mom's recipe and the best recipe that can be made with Gongura.


Ingredients

  • 2tbsp Oil

  • 1lb Mutton

  • 3 cups Red Sorrel/gongura leaves

  • 1 cup Onions, chopped

  • 3-4 Green Chillies

  • 1/2 tsp Turmeric powder

  • 1 tbsp Red chili powder

  • 1 tbsp Ginger garlic paste

  • 1 tsp Cumin powder

  • 1 tsp Coriander powder

  • 1/2 tsp Garam masala powder

  • 1 cup Warm Water

  • Salt as needed

Method

  • In a wide vessel, add Sorrel/Gongura leaves and 1/2 tsp Salt. Close the lid and cook on low flame for 15 - 20 minutes until they turn soft.

  • Heat Oil in a pressure cooker, add onions and green chillies. Saute till the onions turn light brown.

  • Add turmeric powder, ginger garlic paste and saute till raw flavor is gone.

  • Now add the mutton pieces and mix well. Cover it and cook for 4-5 minutes.

  • Add Red chilli powder, cumin powder, coriander powder, garam masala powder and salt as needed. Mix it well, cover and cook for 4-5 minutes. Adjust the seasoning if required.

  • Now add the cooked sorrel/gongura leaves and warm water.

  • Mix it well and pressure cook for up to 3 whistles.

  • Once the pressure is released, Gongura mutton is ready to serve.

  • Serve hot with plain rice.
