Ingredients 2 Cornish Hen 2 sprigs Rosemary 4 sprigs thyme 1 large white onion cut 6 Cloves garlic 1 lemon cut into slices 2 tbsp olive oil For Marinade 1 tsp Salt 1 tsp Pepper 1 tbsp Italian seasoning 2 tsp Smoked Paprika 1 tsp garlic powder 1/4 tsp red pepper flakes 2 tbsp lemon juice 2 tbsp Olive oil
Method Combine all the marinade ingredients in a bowl together. Preheat your oven to 425F. Brush the hens with marinade mixture both inside and out. In a roasting pan, add onions, garlic, rosemary, thyme and lemon slices. Place the hens over the onions and drizzle the olive oil over the hens. Bake for 50-60 minutes or until the hens rare cooked thoroughly. Remove from the oven, garnish with some fresh thyme, rosemary & lime. Serve warm.
