Jam filled Shortbread Cookies

Jam filled shortbread cookies dusted with a little icing sugar.

These cookies are filled with Strawberry Jam. They are easy to make and is perfect for rolling and cutting with cookie cutters. These cookies keep their shape in the oven and are one of my favorites to make all year.

Ingredients

  • 1 cup Unsalted Butter

  • 1/2 cup Confectioners Sugar

  • 1 tsp Vanilla extract

  • 2 cups All purpose flour

  • 1/2 tsp Salt

  • 1/2 cup Strawberry jam

Method

  • In a mixing bowl, beat the butter and powdered sugar together for about 5 minutes until light and fluffy.

  • Mix in the Vanilla until combined.

  • Sift in the flour and salt. Mix on low speed until just incorporated.

  • Gather and form a dough. Cover with plastic wrap and refrigerate for 30 minutes.

  • Preheat oven to 325F.

  • Line cookie sheet with parchment paper.

  • On a lightly floured surface, roll out the dough.

  • Cut out circles with 2 inch cookie cutter, you should get about 40 cookies.

  • With a tiny star cutter, cut out center window in 20 of the circles. Place them on Cookie sheets.

  • Bake for 15 to 18 minutes or until the edges brown just a little bit.

  • Transfer biscuits to a wire rack to cool.

  • Spread 2 teaspoons of Strawberry jam onto 20 biscuits and place star biscuits over jam biscuits.

  • Dust lightly with powdered sugar and serve.
