Spinach Moong Dal Crepe is one of the easiest breakfast recipes to make and tasty as well. It is made up of Moong dal lentils, spinach and spices.
Yield: 8 servings
2 cups Yellow Moong Dal
1 cup Yogurt
1 cup Spinach, finely chopped
1/2 cup Onions, finely chopped
1 tbsp Green chilies, finely chopped
1 tbsp Garlic, finely chopped
1/2 cup Carrot, shredded
1/2 tsp Cumin seeds
1/2 tsp Turmeric powder
1 tsp Red chili powder
1tbsp Lemon juice
Salt to taste
Oil as needed
Wash and soak the moong dal for at least 4 to 5 hours.
Drain the water completely and blend the soaked moong dal into a fine paste without using any water.
Transfer this to a mixing bowl, add cumin seeds, turmeric powder, red chili powder, salt, onions, green chilies, garlic, spinach, yogurt, lemon juice and shredded carrot.
Give the batter a mix so that all the ingredients get blended well together. Adjust the salt to suit your taste.
Heat a pan and pour a ladle full of batter in the center of the skillet and spread the batter into a thin crepe.
Drizzle some oil around the center and the edges of the crepe.
Let it cook until the base gets light golden brown, flip it and cook on another side until done.
Serve hot with Tomato chutney.
