Spinach Paneer Burji is a healthy and delicious Indian dish made with spinach and crumbled paneer.
Yield: 4 servings
8oz Paneer/Cottage cheese
1 bunch Fresh spinach
1 Onion, finely chopped
1 Tomato, finely chopped
1tsp Red chili powder
1 tsp Coriander powder
1 tsp Cumin powder
1 tsp Amchur powder
1 tsp Cumin seeds
2 tbsp Cooking Oil
1tbsp Lemon juice
Salt to taste
Coriander leaves to garnish
Heat oil in a pan, add cumin seeds and let them crackle for a few seconds.
Add finely chopped onions and fry until they turn golden brown.
Add finely chopped tomatoes to it and sauté until the tomatoes turn soft.
Next add red chili powder, cumin powder, coriander powder, salt and amchur powder.
Now add the chopped spinach to it and cook till it turns soft.
Mix everything well and continue to cook the masala for a minute.
Crumble the paneer and add it to the pan. Mix well and cook for just 2 to 3 minutes.
Turn off the heat. Add lemon juice and mix well.
Garnish with fresh coriander leaves and serve hot with Roti or Naan.
