1 pound Boneless, skinless Chicken cut into bite size pieces
3 Garlic cloves
4-5 Red Thai chili
1 1/2 tbsp Canola Oil
1 cup Thai Basil leaves
For the sauce
2 tsp Oyster sauce
2 tsp Soy sauce
1 tsp Sugar
2 tbsp Water
Heat oil in a wok over high heat.
As the wok is heating up, whisk together oyster sauce, soy sauce, sugar and water until well combined in a small bowl. Set aside.
Use a mortar and pestle to pound the garlic and red Thai chili to a rough paste.
Add garlic and chili paste to the wok and cook for 10 seconds.
Add chicken and fry until cooked, around 5 minutes.
Then pour in the prepared sauce and continue to cook until the sauce thickens, it takes about 2-3 minutes.
Stir in the Thai basil leaves and cook until the basil is wilted.
Serve warm with rice.
