Egg Kurma

This is a simple dish which goes very well as a side for chapati or rice.

Ingredients

For Gravy

  • 5 Eggs, boiled and peeled

  • 1 Onion, finely chopped

  • 3 Green chilies, sliced

  • 1/4 tsp Ginger garlic paste

  • 1 tsp Red chili powder

  • 1/2 tsp Turmeric powder

  • 1 sprig Curry leaves

  • Salt to taste

  • 2 tbsp Cooking Oil

  • 1 Egg, lightly beaten

  • 2 tbsp Coriander leaves, chopped

For Masala

  • 3 tbsp Cashew

  • 3 tbsp Grated Coconut

  • 3 tbsp Poppy seeds

  • 2 Cloves

  • 3 Cardamom

  • Small Cinnamon stick

  • 2 Bay leaves

Method

  • Add all the masala ingredients to a blender, blend it into a fine paste by adding little water.

  • Heat oil in pan, add green chilies, curry leaves and onions. Fry until onions turn golden brown.

  • Add ginger garlic paste and turmeric powder, fry for a minute.

  • Now add the masala paste and sauté well for 8 to 10 min.

  • Add red chili powder and salt. Mix well and fry for 2 minutes.

  • Add around 1 - 2cups water until you get desired consistency.

  • Boil the gravy for around 10 minutes stirring in between.

  • Slowly pour in the beaten eggs while stirring gravy.

  • Add the boiled eggs and let it cook for 2-3 minutes.

  • Garnish with coriander leaves and serve with rice or roti.
