This is a simple dish which goes very well as a side for chapati or rice.
Ingredients
For Gravy
5 Eggs, boiled and peeled
1 Onion, finely chopped
3 Green chilies, sliced
1/4 tsp Ginger garlic paste
1 tsp Red chili powder
1/2 tsp Turmeric powder
1 sprig Curry leaves
Salt to taste
2 tbsp Cooking Oil
1 Egg, lightly beaten
2 tbsp Coriander leaves, chopped
For Masala
3 tbsp Cashew
3 tbsp Grated Coconut
3 tbsp Poppy seeds
2 Cloves
3 Cardamom
Small Cinnamon stick
2 Bay leaves
Method
Add all the masala ingredients to a blender, blend it into a fine paste by adding little water.
Heat oil in pan, add green chilies, curry leaves and onions. Fry until onions turn golden brown.
Add ginger garlic paste and turmeric powder, fry for a minute.
Now add the masala paste and sauté well for 8 to 10 min.
Add red chili powder and salt. Mix well and fry for 2 minutes.
Add around 1 - 2cups water until you get desired consistency.
Boil the gravy for around 10 minutes stirring in between.
Slowly pour in the beaten eggs while stirring gravy.
Add the boiled eggs and let it cook for 2-3 minutes.
Garnish with coriander leaves and serve with rice or roti.
